FISHY BUSINESS - FRESH FISH AND SEAFOOD

We are ideally located to have access to the best quality hook caught fish.
You will learn how to recognise top quality fish, how to fillet round and
flat fish and how to cook them to best advantage! You may even get to
catch your own !! The local fishermen are catching lobster and crab at this
time of year - Say no more !!

WILD HARVEST; JAMS , PICKLING AND TRADITIONAL CURING METHODS
This is the time for blackberry picking, raiding orchards and harvesting
all manner of foods. Learn easy recipes for apple jellies, blackberry jam
and their many foods. Learn how to make your own pickles and chutneys.
See how fish was traditionally salt cured and dried fo winter use - when
properly done and cooked it is delicious! Explore the scenic landscape of
Aran and pick fron nature's bounty

MACROBIOTICS - AN INTRODUCTION

This weekend course introduces the basic elements of macrobiotic cuisine as
well as looking at macrobiotic philosophy. A series of simple exercises
and practises will be shown over the weekend and our aim is to help start
you on a few practises that we find invaluable in maintaining a healthy
lifestyle in these times. Recipes will be tasty and also meat, dairy and
sugar free.
It is advisable to avoid tea and coffee for a few days before you arrive.
Please also bring along clothing suitable for light exercise
